I'm confused and stuck on Step 3. 1) The instructions say to wait 24 hours and I am on Day 3. So do I discard 4 oz of starter and begin to feed it twice daily? I started in the late afternoon so unless I wake up in the middle of the night to feed it again, it will only be fed once.

2) "For each feeding, weigh out 4 ounces starter; this will be a generous 1/2 cup, once it’s thoroughly stirred down. Discard any remaining starter. " Do I stir it first, weigh out 4 oz, then discard it? This part is confusing. Please help. Thank you.
