We wonder if you're getting more flour in your starter than intended. Each feeding should be equal amounts of flour and water by weight, or a bit less than twice as much flour as water by volume, leaving you with a starter that's similar to pancake batter in consistency. Increasing the amount of water in your feedings should help even things out until it's a consistency where you can see both bubbling and growth. Happy baking!
