Hi there, Katie! If you have a smaller starter that you're looking to increase to get ready for baking we'd recommend following the tips in our blog article, Maintaining a smaller sourdough starter. If you're looking to increase the amount of discard you have though, you could feed the starter more often as you've suggested, just feed the starter once it's reached its peak. The discard you get from doing this won't have quite the same flavor because it hasn't spent as much time in the fridge but in your pancakes it should be just fine. We hope this helps!
