Kathy, you can use bread flour for your starter and bread if that's what you have on hand! For baking, if you're using bread flour in place of all-purpose flour, you'll want to increase the amount of water in your recipes by two teaspoons per cup of flour, as bread flour absorbs more liquid than all-purpose flour does.
