Hi Trisha. This article and its accompanying recipe page recommends discarding down to just 1/2 cup (or 4 ounces by weight) before feeding with 4 ounces each of water and flour by weight. This will give you a healthy, happy starter with lots of flavor. Annabelle@KAF
