That's a great question, Jennifer! You'll want to use your starter at it's peak, when it has bubbled up to two times its regular volume (typically around 6 to 8 hours after feeding). For more details on what an active starter looks like, check out the Bake section of our Sourdough Baking Guide. There's a whole section on getting your starter active.
