So, just want to be sure - if I feed my starter every twelve hours, it should theoretically be ready to use at any time, right? I've been maintaining mine in the fridge, but I'd like to use it more often. Would there be a time in between feedings that it would be considered "peak" or should it be sufficiently lively to fully leaven bread any time?
