Barbara, the flavor and texture of sourdough discards are best when used within 5-7 days. From a safety perspective, it's still usable after that, but it's not going to be very useful for adding flavor to your baked goods. The details of exactly how long discards are safe to use will vary from one kitchen to another, but if you notice any kind of mold or unexpected smells, make sure you toss the whole batch and wash the container thoroughly.
