I'm with you, Betsy. This one time, take it all out of the jar and weigh the jar empty. Then you can write on the jar how much it weighs, or put the "base weight" of what the jar plus 4 ounces total should be. For a glass jar that's probably something like 6 ounces and change. Make sense? That way, going forward, you take out enough starter to get the jar plus 4 ounces to the "base weight" and you can just add water and flour to that. The only reason to change to a fresh container is if it's getting crusty, gross, or discolored. Susan
