I have taken my beautiful starter out of the fridge. I want to discard most of it, leaving the four ounces behind. Do most people start a new jar each time they feed their starter? It seems so impractical. I feel like you should be able to sort of eyeball how much to leave in your starter jar. It's so sticky, I can't see how to get it all out of the jar, weigh out 4 Oz, and put the 4 Oz back in the jar. Do I take the 4oz and put that in a new jar?
