Welcome to the world of sourdough, Stephanie! Whichever unbleached flour you have on hand, be it bread flour or whole wheat flour etc., will be perfectly fine to keep the starter going while you're waiting for some of our Unbleached All-Purpose Flour. Most sourdough starters will need 2-3 feedings in a 24 hour period before they'll be bubbly, ripe, and ready to bake with. Because this is such a broad topic and each starter behaves a little differently, we encourage you to take a look at our Sourdough Baking Guide, and to reach out to our friendly Baker's Hotline staff at 855-371-BAKE (2253) for additional details specific to your starter.
