Cindy, yes, we called it Monday to Friday Sourdough Bread in the September/October 1993 issue of our newsletter, The Baking Sheet. It starts with potato flakes, sugar, and water, I believe; and makes a really nice, barely sweet sandwich-type loaf. It's a one-time starter; you make it and then use it once, and the whole process took us 5 days (thus Monday-Friday). But it was interesting — especially if you enjoy working with sourdough, which it sounds like you do! PJH@KAF
