Hello PJ, First I would like to apologize if my questions have already been answered. There are so MANY comments and questions on your blog that it would take quite a long time to read all of them! I guess that means I can rest assured that you must know what your talking about. That's why I have read 4 or 5 of your blogs and I will continue until I have read all of them. I have a starter that is not acting right!! When I feed it the volume goes up slightly but then goes back to the same level as when I fed it. I don't think it's behaving correctly. It does get bubbly, but it's not getting the finer bubbles or rivulets. Also, how will I know if a starter is too acid or not acidic enough? I'm wondering if my starter problem is just that! Either to acidic or not enough. I think I might have caused the problem by over feeding it. What do you think? Have a wonderful Christmas!!
