It's not necessary to begin your starter with rye flour, but it can help to boost your starter in the early stages. Use either whole rye flour (pumpernickel flour) or whole wheat flour for best results. The extra vitamins and minerals in the whole grain flours will help increase the activity of the wild yeast.
