We're glad you asked, Kathleen! Whenever we talk about ounces, we're referring to the weight measurement, not fluid ounces (except in the case of liquids where the two are the same). Especially when it comes to maintaining a sourdough culture, we highly recommend measuring by weight, as it allows for much greater accuracy and consistency, but we've included the volume measurements as well for those who don't have that option. If at all possible, we really suggest investing a kitchen scale before/when/if diving into the wild and wonderful world of sourdough - we think you'll find it worth it. Mollie@KAF
