Hi- I thought my starter was in trouble so i took it out of the fridge, dumped some liquid that was on top, mixed it up and added flour and water. it rose a little after 12 hours and without dumping i added 4oz (approximately of each again). it is now risen a decent amount, but did a water test and it doesnt seem to be ready. so in a few hours i was going to feed again. my question for my next feeding is, do i dump most and start with just 4 oz again? or do i add to flour and water to this larger amount? im confused by that part of the directions. do you dump most and start again with every feeding? ive got about 2.5 hours until i need to do something with it... its my first try... havent baked yet and am worried i screwed up my starter completely. HELP :)
