Usually I feed my starter in the morning, use the grown mother to make the dough in the evening, leave the dough in the fridge overnight and make pizzas that day in the afternoon. So about 36-40 hours from feeding starter to making the pizzas.
Can I feed my starter now, mix the dough straight away and leave to proof outside the fridge? My starter is in the fridge and I want to make pizzas tonight but its a last minute thing..... we did not know we were having guests over yesterday. Thanks!
