Hi Mandy,
It sounds like you've got a really healthy starter there, and that it's very active. Once it gets used to being in the fridge, it will settle down and not expand so quickly. If you want to, give it about 2 extra tablespoons of flour when you feed it, so it has to consume a bit more. With a full belly so to speak, it will ferment more slowly. ~MJ
