Hi there, While 8 ounces per cup is a standard measure for water, different ingredients will have different weights per cup. Remember the old "pound of feathers vs pound of gold"? In our sourdough feedings, we use 4 ounces per cup of flour. In our recipes, we weigh one up of all-purpose flour at 4.25 ounces per cup. Hope this helps clarify. ~ MJ
