I keep my starter in the refrigerator and generally time my baking to coincide with feeding so that I can bake with the discard. Last night when I went to use what I had left of my discard I was a 1.5 oz short of the amount called for in my recipe so I grabbed some from the crock in the refrigerator. This is probably going to sound funny, and I think I know the answer but want to be sure: Is this the way starters are normally used? You take what you need as you go making sure you always leave enough to have 4oz to feed? Do I need to discard and re-feed my refrigerated starter now or can I stay on my cycle?
