Julianne, it sounds like your on the path towards sourdough success! You'll want to leave the lid of your starter slightly ajar so that some gas exchange can happen. We highly recommend using our sourdough crock for storing your starter, which is designed to protect the starter just the right amount (and it looks good in your fridge, too!). Happy baking! Kye@KAF
