Does the remaining 4 oz really matter or are we just aiming for 100% hydration here? I made a starter using the KAF instructions but accidentally doubled it... so now, for example, I have been discarding all but 8 oz (weight of starter) and adding back 8 oz by weight each water and flour. The starter seems really active, smells great and nice and bubbly, but I am not sure if it's the right consistency/hydration for most recipes and am concerned it may go bad at the higher overall weight? Thanks!
