I have been baking sourdough for a few years using the instructions that came with KA sourdough starter. Reading the steps above under Getting Ready to Bake, I noticed "take the starter out of the fridge, discard all but 4 ounces, and feed it as usual with 4 ounces water and 4 ounces flour. " The printed instructions say to remove one cup of starter and then feed.
Feeding ONLY 4 ounces of starter resulted in a much lighter loaf. Maybe your education people should coordinate with your retail people.
