DEW, you want to add your fed starter to a recipe when it's at its peak of fermentation. After you feed your starter it will rise and bubble in the container and eventually reach a high point and then, a bit later, collapse. You want to add your starter when it's at the high point. Different starters will take differing amounts of time to reach this high point, depending on activity level and room temperature, etc. It may be helpful to feed your starter one day when you're home and observe and note its progress in the container (a clear, straight sided container works well for this) over the course of the day. This will give you a good idea of how long it takes your starter to reach its peak, and then you can factor this amount of time into your baking day. Barb@KAF
