MIchele, whenever we refer to ounce measurements we are talking about a weight measurement, not a volume measurement. So, the weight of a scant cup of flour is 4 ounces. Here is a handy ingredient weight chart, to give you the weights of many of the ingredients we call for in our recipes. Barb@KAF
