Hi, I started my sourdough 4 days ago (pure rye mixed equal parts with water by weight) and yesterday and today it rose almost 4 times its volume in about 5-6 hrs. I decided to feed each time which means I could end up feeding 3 times a day. My question: should I still allow for 6-7 days for it to be ready to use, OR, if this rate of "doubling" continues will it be ready sooner ? Thank you
