Toni, you're right; it is a combination of science and art and what works best for you with the environment you (and your starter) are living in. If you live somewhere very warm, you will most likely need to discard and feed twice a day. But that's not always a rule, just guidelines like you said. Leaving it on the counter will not cause it to spoil, just be sure to discard and feed and it should be just fine and healthy. Bryanna@KAF
