The above starter maintenance instructions state clearly that they differ from other instructions provided elsewhere by KAF. I'm especially interested in the instructions for keeping my starter at the ready on the counter, rather than in the fridge - you state this can be done if you're willing to feed it twice a day. Yet further down, in a response to a question, you state that it can be kept on the countertop without refrigeration and fed ONCE a day.
I've come to believe that the mash-up of art and science that you mentioned above means that you should take all these instructions as "guidelines," and find WHATEVER happy medium keeps your starter bubbly and expanding. Am I on the right track here? And am I correct in assuming that as long as it doesn't have mold growing on it or smell horrible, it won't harm you? I was worried that not refrigerating it might cause it to spoil...
