I have been confused in your use of "oz" in your directions for using and maintaining a sourdough starter. Are you using volume for water and weight for flour? Your last comment reply above (Sept 29,2015) is the first time I've found a clue when you state "1 cup of flour and 1/2 of water (4 ounces of flour and 4 ounces of water)". That obviously implies weight for flour and volume for water. I think you should explicitly use expressions such as "4oz (vol)" in your recipes.
