I just revived a starter that had been in my fridge for almost a year! When I first made the starter, it took a while to get it going as I was letting the natural yeasts from the air "power" it instead of adding anything to the flour and water. I almost gave up as it took so long, but once it started, it really took off! So, after I dug it out of the fridge after all of this time, I really didn't want to toss it out without at least trying. I only revived a portion of it however, to see what would happen. The rest I took out of the crock (so I can use the crock for the revived starter) and put into a jar and back into the fridge. Once I have to begin discarding, I will add the discard to the jar in the fridge until full, so I have extra to give away, can get a second crock going or in case something happens to the going starter, have a back up.
