Even though I have been baking for years, I have never attempted sourdough baking. So I am in process right now after getting my starter going and ready to bake. I am confused a bit...when the recipe called for " fed starter" as opposed to unfed, what does that mean exactly? Do I feed it right before I measure it out and use it? I am attempting the Rustic Sourdough recipe online and am not having much success as the first attempt did not rise very well and they turned out very nice tasting almost flat bread. I love flat bread but that was not what I was after.
