It could be that over time the starter is evaporating some as it sits. It is easy to increase the quantity. One time, instead of discarding just feed with 1 c. of water and 2 c. of flour. Feed again in 2-4 hours and you will have plenty! It is best to discard the left over starter rather than adding the remains back into the crock, Caroline. Happy sourdough baking! Elisabeth@KAF
