When you discard, use the 1 cup of flour (4 ounces) but reduce the water to 3 ounces. After a few feedings (4), you'll be right back in balance. You could also just feed it four ounces of flour and skip the water one time, which will immediately fix the balance. Some people do maintain a very liquid starter, so just think of it as a learning experience. Happy baking! Laurie@KAF
