Hi there. Thank you guys for being so diligent with keeping up with this blog, it's most impressive! I had a sourdough starter going for a good 1.5 months (2x a day feeding). One day I opened a new bag of KF Unbleached AP flour to feed it and after about 6 hours the thing had "exploded". I normally get a 1.5x rise out of my starter but this thing was a monster coming out of the container and had a really unpleasant and acidic smell. I tossed the whole thing and started over. After cultivating another starter for another month the same thing happened again :( What am I doing wrong!? I've read that leuconostoc can have a false rise affect in the infancy of starters but why would something similar happen to me with a healthy starter? Thank you all so much for your help!
