I began my starter about a week ago and it seems to be doing well. I see about two to three bubbles poking through the surface. Should I wait for more before I begin to bake with it? From the pictures, I see that the surface of the vigorous starter is looking like the bubbles of a cooking pancake.
Also, how long after feeding the starter is it still considered "fed"?
