I've made my first two loaves of rustic sourdough bread but after measuring out one cup of starter I didn't have 4 oz left, only 2.3, is this enough to save and maintain? I put the remaining starter into a jar in the refrigerator....assuming I have enough, how do I maintain it? And how do I go about using it when I decide I want to bake bread again?
