Hi! My friend just gave me part of his sour dough starter and I had a few questions. I read through most of the questions above, so hopefully this hasn't been addressed. I'm not planning on making bread (or using the fed starter) any time soon, so I'm keeping it in the fridge. I do want to use the unfed starter/discard for some recipes (I hate waste, and why not make something delicious with it!) If I use the unfed starter (as in the waffle recipe), do I still need to feed the remainder before putting back in the refrigerator? The recipe says to feed as usual, but if I'm only doing the weekly refrigerator feedings, do I still need to do this? I'm assuming it's required to maintain the correct balance in the starter. Also, is it possible to feed less flour and water? Since I'm not planning on using it soon, I was trying to think of ways to use the discard (or create less discard) What would happen if you feed it 2oz of each flour and water? One more question.. can you keep the starter in a metal bowl? Or is glass/crockery the best? Thanks! I'm excited to start using this! I think I'll make the waffles tomorrow!
