Not everyone is able to bake every week, Jeni, so they end up throwing some starter away (or using it as "unfed" starter in recipes). Also, it is sometimes helpful to give your starter several feedings at room temperature in preparation for baking, as this helps revive your starter from its dormant state in the refrigerator and should provide optimum flavor and rise. These extra feedings do lead to more discarded starter (or more baking with "unfed" starter). Barb@KAF
