Hi Scott- First off, congratulations!!! Getting a starter going can be a tricky task and you clearly really devoted yourself to learning how to read your culture and it payed off! Bread making is hardly ever a cut and dry procedure at any stage and it is wonderful that you not only recognize that challenge, but also that you really took it on and conquered it!
