Thank you PJ Hamel, thats a relief. All my sourdough breads do taste real nice. I thought that I was doing something wrong because everywhere I read, no starter rise was this fast.
With regards to my feeding regime, I feed my mother starter which is refrigerated once every 2 days. Since I use the discarded starter from the refrigerated mother, I keep that on my counter top and feed this discarded starter twice a day. Hope this clarifies it a bit more. I will try to lessen the feeding of the discarded starter and see what happens.
