You're clearly a sourdough vet! And yes, sourdough can be very flexible and forgiving. But for beginners, we like to have a guide that's quite precise; that way, there's a greater chance of success right off the bat, which then lets the new sourdough baker, through practice, become a seasoned SD baker like yourself.
