I would simply follow the instructions given, you will only need to feed more often if you keep your starter on your counter. As for food born pathogens, they would only find their way into your starter if an outside contaminate entered the starter (chicken "juice" as an example). Just make sure to keep it covered with plastic and it should be fine. Jon@KAF
