I keep my starter in the fridge. here is the difference though----I don't feed it before I use it but feed the rest of it. I use both the rustic sourdough recipe snd the extra sourdough recipe and I always end up with delicious loves of bread. My question is why feed it first if my bread turns out great when I don't do it. If your recipes include both fed starter and yeast, then the yeast is also providing the rise for the bread. Using fed starter will help get more rise from the dough and bread, and is the only leavening agent in recipes that don't use additional yeast like the extra tangy sourdough bread. Irene @ KAF
