At the point where you are taking it out of the fridge to use in a recipe, and you take a portion of it off and discard, leaving 4 oz. behind - Is there anything wrong with feeding the 4 oz. (following the directions for its weekly maintenance), AND feeding the 'discard' (and resting that until it's bubbling/doubling), for use in the recipe. I always feel like I'm wasting the discard. Absolutely, Holly - you can feed the "discard" and have two starters going; bake with it; give it to a friend... lots of things you can do with it besides toss it. PJH
