Am I missing something in this sentence? (I admit it's late over here...): Americans tend to like strong, having a little sweetness to enhance and offset the bitterness makes for a rich and complex eating experience. Strong what? Nel, MJ is away, but my guess is she was using strong as a noun, not an adjective. I've added some punctuation to try to make it more clear.
