Hi Caitlin, if your starter is consistently doubling after each feeding and has a pleasant aroma, then it should be fine to bake with. However, it often takes about 10 days to 2 weeks for a starter to fully stabilize and mature, so it certainly won't hurt to continue feeding your starter twice a day at room temperature for a bit longer. The fact that your starter rose so rapidly and busted out of your jar makes me wonder a bit about your feeding routine. You might want to consult our feeding and maintaining recipe, and make sure that your jar is quart size, which should give you plenty of room for this amount of starter to rise.
