Hi Beverly, I wouldn't recommend creating or feeding your starter with our Keto Wheat Flour, simply because this type of flour is fairly low in starch, which is what a sourdough starter needs to consume and ferment. However, you could certainly try substituting the Keto Wheat Flour for part of the flour called for in a sourdough bread recipe.
