As for feeding the starter before using, you may find the need to do multiple feedings. It really depends on the vigor of your starter and your ambient temperatures. You will want to look for signs of ripeness before using, so once that starter doubles or triples within 3 to 6 hours of feeding, you know it will be ready for recipes. That may take one or two feedings or if the starter is bit more sluggish, it may take three or four feedings to waken up.
