Hi Brian, once your starter has been fully developed you can begin to store it in the refrigerator. We recommend feeding it at least once a week when it's stored in the fridge. Ideally you want to give it a few hours at room temperature after a feeding so that it begins to bubble before you stick it back in the refrigerator. When you're ready to bake bread, it's often helpful to give your starter a day or two of twice a day feedings at room temperature. The starter tends to get a little sluggish in the refrigerator, so these revival feedings will make it nice and active again.
