Hi Andy, in both cases the 4 ounces refers to a weight measurement rather than ounces by volume, so 1 cup of pumpernickel or whole wheat flour weighs 4 ounces, and 1/2 cup of water also weighs 4 ounces. The ratio is 1:1 by weight, but if you don't have a scale you'll want to use this method to measure a cup of flour, and use 1/2 cup of water.
